Roast Ham

Ingredients:
  • 2kg Gammon 
  • 1 large carrot, peeled
  • 1 medium onion, peeled
  • 1 stick celery, peeled
  • a teaspoon of peppercorns
  • 1 bay leaf 

For The Glaze

  • 25g Citrus Vinegar
  • 20g Butter
  • 20g Stout & Treacle Mustard or any grainy mustard
  • 50g Orange Marmalade
  • 50g Runny Honey

Method:

  1. For the glaze, place all ingredients into a small saucepan and heat gently.
  2. Stir well to ensure all the ingredients are incorporated.
  3. Add the Gammon to a pot and cover with cold water, along with the carrot, celery, onion, peppercorns and bay leaf. Bring to the boil and allow to simmer for 1 and a half hours. Allow to cool in the water before taking out.
  4. Score the fat in a cross-hatch pattern and stick in cloves in even distances across the surface of the fat.
  5. Pour over the glaze.
  6. Roast the ham at 160°C Fan for 25 minutes, basting the the glaze half way through.
  7. Enjoy! Makes excellent leftover sandwiches.
