Roast Ham
Ingredients:
- 2kg Gammon
- 1 large carrot, peeled
- 1 medium onion, peeled
- 1 stick celery, peeled
- a teaspoon of peppercorns
- 1 bay leaf
For The Glaze
- 25g Citrus Vinegar
- 20g Butter
- 20g Stout & Treacle Mustard or any grainy mustard
- 50g Orange Marmalade
- 50g Runny Honey
Method:
- For the glaze, place all ingredients into a small saucepan and heat gently.
- Stir well to ensure all the ingredients are incorporated.
- Add the Gammon to a pot and cover with cold water, along with the carrot, celery, onion, peppercorns and bay leaf. Bring to the boil and allow to simmer for 1 and a half hours. Allow to cool in the water before taking out.
- Score the fat in a cross-hatch pattern and stick in cloves in even distances across the surface of the fat.
- Pour over the glaze.
- Roast the ham at 160°C Fan for 25 minutes, basting the the glaze half way through.
- Enjoy! Makes excellent leftover sandwiches.
