Cauliflower Steak, Spiced Yoghurt & Stone Fruits

Ideal to serve as a starter or a main, Cauliflower steak have incredible flavour, made more intense by being charred over a BBQ.

Ingredients

  • 1 Cauliflower cut and trimmed
  • Oil
  • Sea salt & Pepper
  • 50ml Natural Yoghurt
  • ½ Tspn Smoked Paprika
  • 5ml Citrus Balsamic
  • ½ Tspn Garlic Powder
  • ½ Tspn Cayenne
  • Stone Fruits & Flaked Almonds to serve

Method

 

  1. Place the steak in a deep dish and cover with boiling salted water.
  2. Leave for 10 minutes then drain and pat dry.
  3. Season the steak generously and lightly brush with oil.
  4. Place onto a hot barbeque and cook for approx. 3 minutes per side until slightly charred.
  5. Make the spiced yoghurt by mixing in the citrus vinegar and the dried seasonings.
  6. Serve the cauliflower with the spiced yoghurt, fruit and nuts.
